[[Cooking]] # [[Chili]] --- - Creator:: [[Food Network]] - Servings:: 8 - Source:: https://www.foodnetwork.com/recipes/ellie-krieger/three-bean-and-beef-chili-recipe-1917076 - Time:: 90 minutes --- ## Ingredients - 1 Tbsp. **Olive Oil** - 1 **Yellow Onion**, diced (1 C.) - 1 **Red Bell Pepper**, diced (1 C.) - 2 **Carrots**, diced (1/2 C.) - 2 tsp. **Ground Cumin** - 2 lbs. **Impossible Beef**, ground - 1 can **Crushed Tomatoes** (28 oz.) - 2.5 C. **Water** - 1 can **Chiles Chipotles Adobado**, seeded and minced ( oz.) - 1/2 tsp. **Oregano**, dried - 1 can **Black Beans**, drained and rinsed (15.5 oz.) - 1 can **Kidney Beans**, drained and rinsed (15.5 oz.) - 1 can **Pinto Beans**, drained and rinsed (15.5 oz.) - **Salt** and **Black Pepper**, as needed ## Directions 1. Heat oil in large pot over moderate heat 2. Add onion, bell pepper, and carrots 3. Cover and cook, stirring occasionally until vegetables are soft (~ 10 minutes) 4. Add cumin 5. Cook, stirring (~ 1 minute) 6. Add ground beef 7. Raise heat to high and cook 8. Break up meat with a spoon until no longer pink 9. Stir in tomatoes, water, chipotles, adobo, oregano, salt, and pepper 10. Simmer, partially covered, stirring from time to time (~ 30 minutes) 11. Stir in beans and cook, partially covered (~ 20 minutes) 12.
